A typical meatball of Valtramontina, produced with sheep’s meat and pork’s bacon, smoked with beech and juniper wood and seasoned for 15-20 days. The taste is pronounced, mitigated by the sweetness of the bacon, with an intense flavour of smoke and herbs. Try it cooked just in vinegar and served with polenta.
