Rolled up in maple or chestnut leaves according to the season, the rind is sticky and irregular, the paste is soft and light yellow in colour, with a lot of eyes with bleu molds
fat and buttery to the palate, the flavour is intense, piccante and aromatic, with zesty and salty notes, very lingering this cheese is produced in a valley of Picos de Europa mountains where it is aged in natural caves.
