Latteria Tre Cime - Dobbiaco (BZ)
In 2004 the dairy replaced the old Pusteran dairy, which has retained a part of the name - Three Peaks - referring to dairies at the end of the nineteenth century of San Candido and Dobbiaco.
Now it's a lab where the visitor can see, tap, learn and taste. Every day, 300 to 380 quintals of milk are collected from the 180 members, then processed into butter, cream and cheeses.
Despite the high technology employed, the dairy remains a craft company, while the filling of molds, in fact, remained manual
